We love the oven. The sand stone finish is beautiful. It has taken a little while to get pizza baking right. The hardest being getting the pizza off the paddle. So thank you for the helpful videos.
We are looking at a bread making course at Red Beards in Trentham (best bread ever). Can’t wait for that.

We love our oven and have been using it a bit, but mostly for Pizza.... now we are getting better at managing temp/fire we are looking forward to cooking other things too!
I need to get better at pre-preparing meals... so if we have a pizza night I have other things ready to cook as the temp dies down.
We would welcome any tips and recipes too!

Hi there. We are just loving having our Etna. We have had so many pizza nights with our friends. Roasts, stews, casseroles and breads galore also. Even an apple crumble. There’s one small problem though. I’m finding it hard to find photos for you. I take many ‘prep’ photos and even ‘cooking’ photos but no ‘end result’ photos because the meals are eaten straight away with hardly any left overs!!!! I did manage to upload a beef stew video to your facebook page. I will endeavor to take some pictures of pizzas cooked this weekend. Now if that’s the worst problem to be had, there’s no problem at all is there.

Just wanted to say we are really happy with our big Etna oven. We made a few mistakes at first but we are getting better and keep trying new things. We cooked a couple of lamb shanks last weekend, that came out so nice! We can’t speak well enough, we really like the oven and all the great service, and thank you for the big pot. It is lovely.

We have used the oven so much and absolutely love it. I made the most amazing pork roast, the best crackling I have ever made!
We can't wait till we can use the rotisserie we just received. All depends on these fires, we have one right near us at the moment so are on a total fire ban. The rotisserie might have to wait until the new year.

We did oven roasted potatoes and pork fennel sausages with olive oil and rosemary, it came out fantastic.

My-Pizzaioli oven is proved and first cook up this coming weekend. Yea.
Love your work and I love the oven. Very little cracking after about 10 days of increasing fires so that’s good. I will send you photos of the oven outside my super new eco friendly off grid small house on the hill. I just need to get the wood storage unit under the stove finished and painted and we are ready to go. FYI I got the bobcat operator profiling my garden to lift it into place. Effortless.
Thanks again. I will start to claim a spotters fee as I have many people enquiring where I got such a beautiful oven from. You do a good job so I am happy to pass on my unreserved recommendation.

I have cooked 2 roasts & cooked pizza for the 1st time last night. All very nice I just have to figure the pizza dough out a bit better as I'm gluten free I have googled a recipe for next time.

We are passionate about pizza and already have a few wood fired ovens but when we saw the “Piccolo”, we couldn’t resist but purchase one. It is worth every cent and we absolutely love cooking in it. It looks good, cooks good, it’s lightweight and portable, made from high quality materials, has a rotating stone and comes with a 2 year manufacturers warranty. Giuseppe and Christi were a pleasure to deal with, super friendly and had our oven to us quickly. We highly recommend this product to anyone who is looking for a quality oven of this calibre.

I had considered buying a pizza oven quite some time ago, the problem was size… That was until I saw the Piccolo.. It was a great looking option. After a lot of thought, I decided yes we should get one. Once we got it setup (which was very easy and quick to do) we watched the videos that were sent to us via email. We got some hardwood, which is exactly what we were told to get in order to get the high temperatures. After about 15 minutes we got the oven to about 300 degrees. From what I could gather this was a good temperature to cook at. We put in the first pizza and to my surprise it was ready within about 1-2 minutes. It was a chicken and bacon pizza with plenty of topping as well. I was skeptical as to how it could do it so quickly but sure enough it was cooked perfectly! Within about 8 more minutes we had cooked a total of 5 pizza’s.
The next test, the biggest one was the taste test…. Well my family of 6 absolutely loved it. Finally after 4 years of trying to cook a pizza in our regular oven we had got something better tasting than the take away pizza’s. It was such a hit that we have since had pizza at least once or twice a week. We did try a roast but due to our lack of experience it didn’t work out great but that we know is just experience and we can’t wait to get it right. If you are tight on space and don’t have room for a large one, but you still want a great tasting and well cooked pizza then get the Piccolo! I have now got neighbours, friends and family wanting to get one because they enjoyed the pizza’s we made for them so much!
As a person capable of burning water when it comes to cooking… I think that it could not be easier, it is great for the kids as they love watching the pizza cook as well. It is a fantastic product, well built, and very well priced. I don’t think any family who loves home cooked pizzas should look past this very capable and well made Piccolo.

I purchased the new Piccolo wood fire ovenabout 3 months ago.
I have to say that this oven is clearly the best woodfired oven l have ever had.
From the moment l unpacked it l new that this is a great oven.
Well packaged and made to a very high quality. From when you light the fire and within 20 or so minutes
this little beauty is ready to cook the best pizza you’ve ever had. The rotating stone cooks the pizza perfectly every time. I have also cooked some roast meat dishes as well, excellent result with that woodfired smokey flavor.
At the right temperature this oven can cook a pizza in a few minutes. A small compact oven, but huge on performance.
I would highly recommend this oven to any household.

Thank you for your PDF booklet and recipes. We have been using our Piccolo wood fired oven EVERY weekend (except when raining) since we purchased it in October.
It is the perfect size to cook for two people, and we are so excited about the wonderful things you can cook in it.
WE LOVE COOKING in it – and are very happy with our purchase and all the wonderful weekend evenings we have spent, cooking good food, drinking a glass of wine, and enjoying our outdoor BBQ area.

We picked up the Piccolo wood fire oven up and set it up straight away. It was very easy to assemble.
We have had two weekends of cooking in our Piccolo 😊
It is a perfect fit on our stainless steel bench, and we now have mastered the knack of lightening it very quickly. We have a layer of hardwood chips, then add some pine pieces and by using a potato peeler we shave the pine kindling to get a nest of shavings which produce a good flame and once the pine is burning add the hardwood. It only needs a few pieces of hardwood to get the temperature up and it stays up for quite awhile.
Attached are some pictures of our first pizza ready and waiting for the temperature to go up to then cook, then the cooked result ..yum. That night we used the pizza oven to cook some french lamb cutlets – 15 minutes and we had lamb medium rare with an amazing Smokey flavour (apple wood). I used a BBQ grill plate that just fitted perfectly on the pizza stone and so it rotated around giving an even cook.
Sunday breakfast was bacon 😊 … we have cook eye of fillet steak, 2 minutes each side to get medium (forgot to take photos).
Looking forward to your cook book so that I can try out more cooking ideas.

Great oven! I enjoy just very well. It is fired by biomaterial which is a feature I love. Other positive features are tiny amount of ash and smoke is insignificant. I have made bread and done a lot of great cooking with my chef wife. Whole family enjoyed.

Portable pizza oven Maximus

We have used our Maximus around 4 times and I find it much easier to establish a fire compared with our previous Cobb oven and it uses far less wood. Naturally it does not seem to hold the heat to the same extent when the door is open but we are very thrilled with it overall.
We have cooked a variety of things and I love that the door is larger and we can easily do three pizzas at a time.
Last night we cooked a barramundi on lemon myrtle leaves and wrapped in banana leaf - it was sensational.

I have been researching ovens for a while, mostly focusing on traditional styles, however, the portable nature of the MAXI, plus large cooking surface (along with not being as heavy) was what drew me in. We have used the pizza oven a half dozen times now and have probably cooked 30 pizzas. They are really great. We make the dough in the morning and let it proof all day. Cooking is at 450-500C on the bricks for the Pizza Napoletana. I’m really happy with the purchase.
I sorted the curing and did not get any cracks.
Do you have a dough recipe that can be made and cooked not long there after? Lack of planning and a last minute pizza idea.
Any pizza tips, tricks or topping ideas would also be appreciated.
